Main Ingredients:
- 2 lbs (4 to 5 cups) Chopped Rhubarb
- 1/2 cup sugar (*or more – see instructions below)
- 1 tsp cinnamon
- 2 Tbsp lemon juice
Directions:
- Put in large casserole
- Dot with butter or margarine
- Bake at 350F for 20 minutes
- *Add more sugar at this point if necessary
…. While the above is baking:
Topping: (Blend this in a separate bowl)
- 2 cups flour
- 1 Tbsp baking powder
- 1 tsp salt
- Cut in 1/2 cup Crisco shortening
- Put 1 egg in measuring cup
- Fill measuring cup with milk to bring it up to 1 cup. Mix.
- Add to topping mixture
- Drop on top of hot rhubarb sauce
- Bake at 375F for 35-40 minutes.
