Main Ingredients:

  • 2 lbs (4 to 5 cups) Chopped Rhubarb
  • 1/2 cup sugar (*or more –  see instructions below)
  • 1 tsp cinnamon
  • 2 Tbsp lemon juice

Directions:

  1. Put in large casserole
  2. Dot with butter or margarine
  3. Bake at 350F for 20 minutes
  4. *Add more sugar at this point if necessary

…. While the above is baking:

Topping: (Blend this in a separate bowl)

  • 2 cups flour
  • 1 Tbsp baking powder
  • 1 tsp salt
  • Cut in 1/2 cup Crisco shortening
  1. Put 1 egg in measuring cup
  2. Fill measuring cup with milk to bring it up to 1 cup. Mix.
  3. Add to topping mixture
  4. Drop on top of hot rhubarb sauce
  5. Bake at 375F for 35-40 minutes.
