Put everything in a roaster and bake for a complete meal.
2 lbs of stewing beef (lean) (cut bite size or larger)
2 medium onions cut up
5 medium potatoes quartered
2 medium carrots quartered
2 sliced celery stalks
28 oz can canned tomatoes
3 tablespoons minute tapioca
2 cups beef stock
½ teaspoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon salt
½ teaspoon pepper
1 teaspoon sugar
Put first five ingredients into medium roaster. Mix remaining ingredients.
Bake in 300° F. oven for four hours.
Brown the meat with onions on Sautee Mode. Turn off Sautee mode, add in
the rest of the ingredients (EXCEPT THE THICKENING AGENT!).
Cook for 35 mins on Manual Pressure Cook mode. Let naturally release.
Open lid, turn on Sautee mode and add in the thickening agent (Tapioca, or
cornstarch). Stir until it thickens and then turn off the Instant Pot.
